Mock Tuna Salad

Sandwiches or side dish

What makes this "mock tuna" is that you use Jack Mackerel instead of tuna. They are the same family of fish and taste extremely similar but the Jack Mackerel is about 1/4 the cost.

Time to prepare: 8 minutes

Ingredients:

1 can of Jack Mackerel (a lot cheaper than tuna)
1/4 diced onion
2 sticks of Celery diced
2 tbsp of sweet pickle juice
1 cup of Mayonnaise
1 pinch of salt

Mix all the ingredients together in a bowl using a fork and break up the mackerel flakes.

Serve about 3/8 of an inch thick on either fresh or toasted bread.

Yield: about 5 sandwiches
