Midwest Meatloaf


Ingredients:

2 pounds ground beef 
1 small onion, finely chopped 
1/2 red bell pepper, chopped 
2 cloves garlic, minced 
2 eggs, lightly beaten 
1/2 tsp of Salt 
1/2 tsp of Pepper 
2 teaspoon chili powder, optional 
1 cup ketchup or tomato sauce -3/4 cup in mix and 1/4 cup on top
2 tablespoon mustard 
1/4 cup chopped fresh parsley 
1/2 cup of cheese added in to the mixture and 1/4 cup applied to the top 
4 slices bacon

Place a layer of tin foil in the bottom of the oven to catch any drippings and splatters. Preheat oven to 350 degrees. Combine the mixture ingredients in a large bowl turning it gradually not vigorously. Gently mound the meat mixture into a metal 9x5 loaf pan. spread  the remaining 1/4 cup of Ketchup and cheese over the top. Top this  with 4 strips of bacon. Place on second rack from the top. Bake for 1 hour and 15 minutes. Remove from oven and let sit for 15 minutes before slicing.
