Meringue

Ingredients
- 3 egg whites, at room temperature
- 6 tbsp sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cream of tartar
- When making Key lime pie add 1 tsp of key lime juice and 2 more tbsp of
sugar
Beat the egg whites at high speed with an electric mixer until soft peaks form.
With mixer running, add the cream of tartar, then gradually add the sugar, a
tablespoon at a time, and beat until stiff peaks form. Beat in the vanilla, and
if a key lime topping then the lime juice
This can be used to top your favorite Key lime pie or Lemon Meringue pie. Be
sure to cover the entire pie to prevent the filling from bubbling out.
Always let a soft filled pie to cool before cutting and use a wet knife
blade.
