Billy Can Coffee

A Billy can is basically any can. Generally and old 3 pound coffee can or similar, that is set over an open fire and used for cooking. This was a common practice with "hobos" and the term was immortalized in the Australian song "Waltzing Matilda". It will commonly have a wire handle attached to it through holes poked in the sides near the top, or is gripped with a pair of pliers (visegrips) to lift it. Use extreme caution when handling a Billy can as nasty burns can occur. See Legal.

Ingredients:

6 Tablespoons of you favorite fresh ground coffee beans.

5 (4 plus 1) Cups cold water (The colder the better)

1 Pinch of Salt

Add the coffee and salt to 4 cups of the water and and place it over the fire. Bring it to a boil and allow it to boil vigorously for 1-2 minutes but no longer. Remove from the fire and pour the last cup of cold water into the boiled mixture. (Warning the Cold water will expand so rapidly that it can cause it to boil over. Never place a tight fitting lid on the container right after adding the additional water. If you are using a outdoor coffee pot which has a lid, do not pour the the cold water into the spout as this can cause a violent eruption) Adding the cold water causes the grounds to settle to the bottom and removes most of the bitterness that is in coffee. It may sound a bit scary but it may be the best coffee you ever drink.

Drink it black or add you favorite condiments.

Either of these two may also be added to your coffees to help remove the bitter edge. There is also several commercially available coffee substitutes should your want to avoid the caffeine or perhaps you may be sensitive to the coffee bean ( this is often the cause of sinus problems).
