Vanilla Rice Milk

Ingredients:

1 Cup of Rice
4 cup of waters ( Twice as much as normal)
4 Additional cups of water
1/2 tsp of salt
2 Tbs sugar (to taste)
1 tsp of Vanilla

Optional ingredients:
1/4 tsp of ground cinnamon
1/8 tsp of ground nutmeg.

Bring the first 4 cups of water to a boil, add the salt and the rice. Bring this mixture back to a boil and then turn down the heat to medium low (No longer boiling) and cover for 20 minutes. Remove the lid and bring to a slow boil and continue to cook until the rice becomes soft almost mushy. Allow to cool for 5 minutes then pour this  mixture into a blender. Run the blender on high until it is liquefied adding in the additional water  a little at a time until all is in the blender. Add in the sugar  but not the the vanilla (not yet). Remove from blender Allow to settle for 5 minutes and then pour it off being careful to not drain the dregs off the bottom off the blender in the container. Use a fine strainer or cloth if you want to get it real smooth. Add in the optional cinnamon and nutmeg while it is still warm and when cool add in the vanilla and stir vigorously. Chill in the refrigerator and shake or stir before serving.
