Bread dough Donut Recipe
Glazed Donuts

Ingredients
5 egg yolks (use the whites for a
Meringue)
1 cake or package of yeast
6 cups flour
1 tsp. salt
3 cups milk
3 Tbs. unsalted butter
1/2 cup granulated sugar
1 tsp sugar
Instructions:
- Mix yeast & sugar in lukewarm water (100 to 110 degrees); let stand.20
minutes
- Mix together egg yolks, butter and yeast mixture.
- Add flour and make a soft dough. Mix well with a wooden spoon; let stand 1
hour.
- Do Not knead !
- Place donut dough on a floured board, and pat out to about a 1 inch
thickness with your hands.
- Do Not use a rolling pin!
- Cut out donuts, let stand 45 minutes.
- Deep fry in oil until golden brown. Remove, drain and sprinkle with
powdered sugar or dip in glaze (see below)
Glaze
1 Cup of sugar
1/3 c. evaporated milk
1 tbsp. butter
1 tsp lemon juice (optional)
Combine and cook all ingredients in a small saucepan on medium
heat. Cook until a few drops of mixture begin to harden when dropped into a cup
of cold water. Use a fork to lift donuts, one a at time, into hot glaze. Allow
excess glaze to drip from doughnut. You must work quickly before glaze hardens
