Bread dough Donut Recipe

Glazed Donuts

Ingredients

5 egg yolks (use the whites for a Meringue)
1 cake or package of yeast
6 cups flour
1 tsp. salt
3 cups milk
3 Tbs. unsalted butter
1/2 cup granulated sugar

1 tsp sugar


Instructions:

  1. Mix yeast & sugar in lukewarm water (100 to 110 degrees); let stand.20 minutes
  2. Mix together egg yolks, butter and yeast mixture.
  3. Add flour and make a soft dough. Mix well with a wooden spoon; let stand 1 hour.
    Do Not knead !
  4. Place donut dough on a floured board, and pat out to about a 1 inch thickness with your hands.
    Do Not use a rolling pin!
  5. Cut out donuts, let stand 45 minutes.
  6. Deep fry in oil until golden brown. Remove, drain and sprinkle with powdered sugar or dip in glaze (see below)

Glaze

1 Cup of sugar
1/3 c. evaporated milk
1 tbsp. butter
1 tsp lemon juice (optional)

Combine and cook all ingredients in a small saucepan on medium heat. Cook until a few drops of mixture begin to harden when dropped into a cup of cold water. Use a fork to lift donuts, one a at time, into hot glaze. Allow excess glaze to drip from doughnut. You must work quickly before glaze hardens
