Banana Bran Bread

A  yeast free bread that rises but remain a bit dense mostly due to the bran. Taste great and is so good for you.

Ingredients: Make sure ingredients are fresh or the bread may have a bitter taste.
1-1/2 cups flour
1/2 cup sugar
2 tsp.  Baking Powder
1/2 tsp. baking soda
1/4 tsp. salt
1 egg
1-1/2 cups mashed ripe bananas (2 to 4 bananas showing a couple of black spots) 
1-1/2 cups  100% Bran Cereal - Can be found in a small box near breakfast  cereal in supermarkets-
1/4 cup water (Milk may be substituted)
2 Tbsp. vegetable oil (you may substitute with shortening)
1/2  to 1 tsp. vanilla (Do not over do with the vanilla - more is not better)
Optional:1/2 cup of coarsely chopped walnuts (honey colored-do not use if dark)


Mix all the dry ingredient in a large bowl. Use an electric beater to beat the egg in medium sized bowl. Add in the bananas, water, oil and vanilla (Can be done by hand but squish the bananas with a fork first). Slowly add this to dry ingredients mixture; stirring just until all ingredients become moistened  (lumpy not smooth.)
Spoon batter into a standard 9x5-inch bread loaf pan sprayed with cooking spray or rubbed with shortening.
Bake at 350°F for about  1 hour  or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan then allow to cool to the point that you do not feel heat when held in your hand before cutting or it will tear and crumble. Use a bread knife of at least a long seriated knife to cut it in slices 5/8  (15mm) thick. 
Serve by placing the slices in the microwave for 15 second and then butter or butter first and then nuke. Best served with water as the taste may be muted by flavored beverages.
